A RESPECT FOR SITE
If you want to make really great wine that reflects where it comes from, you have to start with fruit that’s amazing. Low-intervention starts in the field with organic and wholistic practices in mind and working with other like-minded growers in PEC or Niagara. Each wine we craft reflects its own unique terroir.
ORANGE WINES: FLAVOUR & TEXTURE
Fermenting whites on skins from 2 weeks to 1 year can create beautiful texture, adding tannin and augmenting flavour. It’s a theme covered in Simon J Woolf’s book about Orange Wine: Amber Revolution. We are also one of only three Canadian wineries to be featured!
